Sloppy Joes remind me of my childhood. It was one of my favorite weeknight meals that we all looked forward to. These days, I am a little more self conscious of my carb intake and always looking for new ways to make my favorite comfort food recipes a little lighter. Eliminating the bun means I can enjoy the same delicious flavors of sloppy joes without the guilt. Sloppy Joe Stuffed Peppers have quickly become one of my go-to weeknight meals that my whole family will gladly eat, and you are going to love making them too!

Things You\’ll Need

1 lb. ground beef

1 onion, finely diced

3 minced garlic cloves

1 cup tomato sauce

1/3 cup ketchup

2 tbsp. tomato paste

1 tbsp. brown sugar

2 tbsp. Worcestershire Sauce
-
1 tbsp. apple cider vinegar
-
1 tsp. salt
-
1/2 tsp. black pepper
-
1 tbsp. olive oil
-
3 green bell peppers, sliced in half and seeds and stems removed
-
1/2 cup shredded Mozzarella or Monterey Jack cheese
-
1/4 cup beef broth or water
-
2 sliced green onions (optional)
Step 1: Preheat Oven
Preheat oven to 375 degrees.
Step 2: Brown Meat, Onions & Garlic
Heat a skillet to medium high heat and add oil. Add ground beef along with half of your salt and pepper, and cook until meat is broken up and browned slightly.
Add in the onion and garlic and continue to sauté for another few minutes until onions just become soft.
Step 3: Make Sauce
After your meat and onions have browned, reduce heat to medium and add in tomato sauce, ketchup, tomato paste, Worcestershire sauce, apple cider vinegar, brown sugar and the rest of the salt and pepper. Stir to combine well and then cook for 5 minutes until flavors have combined.
Step 4: Stuff Peppers
Spoon about 1/4 cup of the sloppy joe mixture inside of each pepper until they are full.
Step 5: Top with Cheese
Top each stuffed pepper with cheese and then pour beef broth into the bottom of the pan so that the peppers are sitting in the liquid (this will help steam the peppers). Cover and bake for 25 minutes, then remove cover and broil for 2 minutes until cheese is browned slightly to finish the cooking process. Sprinkle with green onions (optional) and serve immediately.
