This is my default method for making french fries at home even when I buy them precut and frozen. They're crispy every time, and they're always delicious. The first secret is cornstarch (you don't need this with precut frozen fries) because it draws out moisture for crispier fries. The second secret is tossing the fries. Don't be afraid to open the air fryer – it's completely OK! Tossing the basket every five to seven minutes is how you get evenly cooked fries that are perfect every time.

  • 2 pounds russet potatoes

  • 2 tablespoons olive or avocado oil

  • 1 tablespoon cornstarch

  • 1 teaspoon sea salt

  • 1/2 teaspoon garlic powder

Step 1: Cut the Potatoes

Cut the potatoes into strips and put them in a large bowl.

Step 2: Coat the Strips

Drizzle olive oil onto the potato strips and sprinkle them with cornstarch, salt and garlic powder. Toss to coat.

Use your favorite spices! You can add chili powder, paprika or any other spices you love.

Step 3: Add to the Air Fryer

Add the potato strips to the air fryer and cook at 400 degrees Fahrenheit for 22 minutes.

Step 4: Toss the French Fries

Open the air fryer every five to seven minutes and toss the basket to redistribute the fries. This will help the fries to cook evenly on all sides, and you'll avoid having some cooked and others raw. If the fries are not cooked to your liking, cook for five more minutes. You can also remove the ones that are cooked and continue to cook the ones that need more time. (This usually happens with hand-cut fries that are different sizes because the smaller ones cook quicker.)
