A bowl of oatmeal is a classic breakfast option for those looking for something quick and filling. As delicious as oatmeal can be, it's always fun to find new ways to put a spin on this breakfast classic. While fresh fruit or nuts are always a welcome addition, why not try something a little different and make a brûlėed version of your oatmeal instead? The addition of a little extra sugar on top and some time spent under the broiler is all it takes to create a lovely layer of crunchy caramelized goodness.

2 cups water

1 cup rolled oats

1/2 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon table salt

1 teaspoon brown sugar, or other sweetener of choice

3 tablespoons Demerara sugar

2 oven safe dishes
Step 1
Add 2 cups of water to a saucepan and bring to a boil.
Step 2
Add the rolled oats, cinnamon, vanilla extract and salt to the saucepan and reduce heat slightly. Allow the oats to gently simmer for 8-10 minutes, or until tender and desired texture is achieved. Mix in the brown sugar and remove from heat.
Step 3
Turn the broiler on. Divide the oatmeal between two shallow, oven-safe dishes and place them on a baking sheet. Sprinkle 1 1/2 tablespoons of Demerara sugar over the top of each dish and quickly place on the highest rack under the broiler. Broil until the sugar melts and begins to caramelize — this can take anywhere from 3-5 minutes depending on the size of dish used. Keep a close eye during the whole broiling process, and make sure to rotate the baking sheet as necessary to prevent any spots from burning.
Tip
Try sprinkling most of the sugar in a concentrated area as this will ensure an especially crunchy top.
Step 4
Remove the tray from the oven and carefully transfer the hot dishes to another plate or serving board. Allow the sugar to cool for a minute or two. Top with fruit and enjoy while warm.
Tip
You can also use a kitchen torch to caramelize the sugar.
